Spiced Apple and Cranberry Loaf

Cranberry and Apple Loaf

Makes 1 loaf

100g each of wholemeal and plain flour

1tsp bread soda or use baking powder

100g butter

100g sugar preferably brown

½ tsp salt

1tsp mixed spice

2 eggs

Zest and juice of an orange

125ml butter milk or plan milk if you wish

75g cranberries

2 apples peeled cored and diced

1 spoon mixed seeds for top

 Add dry ingredients (down as far as spice) to a food processor and blitz until like fine crumbs.

Whisk eggs milk zest and juice together and add to processor and mix to a batter.

Remove blade, stir in the apple and cranberries and pour into a greased 2lb tin

Sprinkle over the seeds and bake at 170C for about 40 mins until a skewer comes out clean
