Bramley Berry Bake
1 large bramley apple peeled and sliced
250g berries separated 200/50
2 eggs
4oz butter
4oz castor sugar plus 1tsp
4oz flour
1tsp baking powder
2 tbsp flaked almonds
1 star anise
Oven at 180c
For the syrup
Tip the smaller amt of berries into a pot with 1tsp of sugar, a tiny splash of water and the star anise (if you have it). Gently give it a stir and turn the heat on to medium, stir it again to mix the sugar and let the berries soften over a medium heat for a few minutes. Take out the star anise and push everything through a strainer and reserve your syrup and let it cool.
For the bake
Line and 8” by 8” tin with parchment paper. Beat the sugar and butter well until pale and creamy. Beat in the eggs and sieve in the flour and baking powder and beat well to combine. Tip into the tin, press in the slices of apples and berries, sprinkle over the almonds and bake for about 20 minutes.
Let cool and cut into slices and serve with the syrup.
