Sweet Potato and Apple Breakfast Bread
Makes 1 loaf
8oz plain flour
11/2tsp baking powder
1/2 tsp salt
1 heaped tsp mixed spice
50g honey
5tbsp light vegetable oil
juice and zest of 3 oranges
5oz grated sweet potato
3oz cranberries
2 apples peeled bored and grated
Oven at 180C
Line a loaf tin with a reusable liner or lightly grease
Mix the flour baking powder salt and spice in a bowl
Make a well in the centre and add grated apple, sweet potato , orange zest, juice, oil, and honey and mix well to combine.
Scrape into the loaf tin, smooth and bake for 50 mins until a skewer comes out clean.
Cool on a rack before removing from the tin.
