Roasted Sweet Potato & Chickpeas with a Lime Yogurt Dressing
Enough for 3
Ingredients
1 tin of chickpeas rinsed & drained
1 big sweet potato peeled sliced and cut in 3cm pieces approx
2tbsp sweet chili sauce
1tbsp rapeseed oil
Dressing
4tbsp Greek style natural yogurt
2tbsp chopped coriander
zest of 1/2 lime
Juice of 1/4 lime
1/4 tsp salt
1 Large Wrap
Directions
Toss the chickpeas in the sweet chili sauce and oil
Tip into a roasting dish and roast at 170C for 20mins
Tip out onto a serving dish.
Dollop over some of the dressing and serve with the wrap in triangles.
Dressing
Mix everything together and taste for seasoning and add more lime juice if needed.
Wrap
Toast the wrap on a warm pan. I like to brush gently with a bit of oil and sprinkle a little cumin onto it.
Flip after a few minutes and do the same with the other side. Cut into triangles.
