Fig Protein Bliss Balls
Makes 25
Ingredients
200g figs – if they are very dry soak them in boiling water for a while to soften – remember to remove the stalk
25g coconut oil – You can use it while solid
90g slivered almonds
50g chocolate drops or dark chocolate cut up into very small pieces
1 scoop (approx. 20g) protein powder of choice vanilla, chocolate etc
1tbsp super seed mix (optional – it adds lots of goodness from flax seeds etc)
150g Dark Chocolate to coat
Add everything bar the 150g of chocolate to a good processor and work until it is soft and thick like a paste. You might need to scrape it down once or twice.
Tip everything out and form (roll) into balls roughly the same size. Place them on a flat tray lined with parchment. Put them into the fridge while you melt the chocolate.
Melt the chocolate and cover the balls in it – its easy if you put 3 or 5 into the melted chocolate, gently move them around to coat and take back out and place on the tray again.
You can sprinkle the top with another pinch of the seeds if using.
Put them in the fridge until they are set and then store them in the fridge in a bowl covered with clingfilm or a plastic sealable tub.
