Coconut Curry with Potato & Prawns
The flavour of this is unreal and it is really easy to prepare. You can leave the prawns out, add any fish you want or just load up some more veggies in it. It is so versatile
Serves 4
1 med red onion sliced
2cloves garlic mashed
1tsp salt
1tbsp oil
2tso garam masala
1tsp turmeric and nigella / kalonji seed
1tin chopped tomatoes
1tin full fat coconut milk
400ml water
500g small potatoes cleaned and par boiled
Juice of 1/2 a lemon
3 tsp brown sugar
1tbsp apple cider vinegar
optional 350g prawns ready cooked
heat the oil and cook the onion and garlic for about 5 minutes
Add in all the spices plus a splash of water and cook for another 5 minutes
Tip in the tomatoes, water and coconut milk and stir well,and the potatoes bring to the boil then turn down, add in and simmer for 10 minutes until the potatoes are cooked.
Just before serving add in the vinegar sugar and lemon juice, stir well and taste for balance.
Add in the prawns and heat through for about 3 minutes then serve with corianader rice.
