Chunky Guacamole - The perfect side

Chunky Guacamole

This is a delicious take on Guacamole - Guacamore more like, as once I start I have to have the bowl taken away from me!

It is full of good fats, beta-carotene, folic acid, potassium, vitamin C so as well as tasting delicious is so good for you. Enjoy with your favourite veggies or as a side with grilled chicken or a bean chilli. Just remember that with all that goodness comes a whack of calories so go easy.

Chunky Guacamole

2 ripe avocados
1/2 finely chopped red onion
1 chopped cooked red pepper (from a jar)
1tbsp chopped coriander
Juice of 1/2 a lime plus salt and pepper for seasoning.
340g mashed ripe avocado and

Add everything to a blender and blitz a few times - don’t turn to mush as you want the avocado still visible in chunks. Taste and adjust seasoning as necessary. Store covered in the fridge while not being eaten.
