Halloumi, Melon and Grape Salad

Halloumi Melon & Grape Salad

This is a delicious summer salad and the caper vinaigrette is a wonderful addition with the sweet melon and grapes paired with the salty halloumi. This cheese is very high in fat so keep the portions small but this is a gorgeous starter for a summer day.

Serves 3

200g halloumi in slices about 1cm thick

Bag of mixed leaves

1/2 Canteloupe melon in chunks

100g Purple Grapes washed

Handful of pine nuts

Dressing

juice of an 1/2 an orange
1tbsp balsamic vinegar
4tbsp olive oil

1tbsp wholegrain mustard
1 garlic clove peeled and chopped
1 tsp flat leaf parsley chopped
2tsp capers drained and chopped if large

Whisk the oil, vinegar, juice and the mustard together until emulsified. Stir in the garlic, parsley and capers. Taste and adjust the seasoning including a drizzle of honey if needed and and set aside.
Griddle the halloumi until golden on both sides.

Toast the pine nuts gently .

Arrange the mixed leaves, melon, grapes and pine nuts on a service plate.

Add the halloumi and gently drizzle over the vinaigrette
