Coconut Pistachio Rice Crispy Treats
These are like a grown up party treat, a cinch to prepare and delicious to eat. I cut them small because they are delicious and also a calorie bomb!
Makes 16 small squares
100g rice crispy puffs – you can buy brown rice ones from the health food shop if you wish although I just used the regular breakfast cereal
90ml coconut oil
50ml honey
80g chocolate spread like a nutella or proteinella
Zest of an orange
Method
Melt the oil honey and chocolate spread in a bain marie.
Pour over the rice crispies and stir well to combine.
Stir in the orange zest and then pour into a parchment lined square container approx. 10by10inches.
Press the mixture down really really well and put it into the fridge to set for a few hours.
When it is done melt the dark chocolate and spread over the top, cover with the chopped pistachios and put it back in the fridge to set - When it is ready cut into squares. Store it in the fridge as coconut oil gets melty at room temperature.
