Spicy Noodle Bowl
This is a great versatile recipe as it will suit any vegetarian or vegan eater in the family and in our case I can pair with some fish or roast chicken to boost it for Dom. In terms of noodle choice, simply pick the ones you prefer, we love the medium egg noodles but you can use rice, buckwheat -whatever you have on hand. I make the egg noodles, sprinkle over some sesame oil, cover with cling film and they will keep in the fridge for a few days so you can just stir fry some veg or add an egg, some fish / other protein and eat!. Easy and delicious!
Serves 3- 4
250g medium egg noodles - cook as per packet instructions, drain, sprinkle over some sesame oil, mix and cover with cling film until needed.
Stir Fried Veg
1 white onion diced
2heaped tsp chopped garlic
1tbsp oil
1tsp chopped chilis (or more if you like it) or 1 tsp of dried chili flakes
2 spring onions trimmed and sliced
6 florets of broccoli sliced thinly along the ‘tree’ length
2 cooked red peppers sliced
squeeze of lime juice
1tbsp sesame oil
1tsp palm or brown sugar
3tbsp chopped coriander
Heat the oil and add the onion, garlic, spring onion , chopped chilis and broccoli and stir fry over a high heat, making sure it doesn’t catch, for about 3 minutes, Toss in the red pepper and stir fry for another few minutes. When the broccoli is done to your liking, add the lime juice, sesame oil, sugar and toss everything together.
Add to the bowl cooked noodles, mix well, add coriander, give it a final mix, season with salt, taste it and adjust as needed with another sprinkle of sesame oil and or some more lime juice.
