Summer Breakfast Crumble

Apple and Berry Breakfast Crumble

If you have a gang to make breakfast for then this is a real crowd pleaser. You get the filling goodness of whole grains and oats plus loads of fruit. Load up with some yogurt for a breakfast that is sure to fill everyone up until lunch.

Oven at 180C

5 cooking apples, peeled and sliced

300g blackberries

Zest and juice of a clementine  

150gr plain flour
50gr brown sugar

100gr oats
1tsp mixed spice
75g butter, cut into pieces cut into pieces

Add the apples to a pot, with about 50ml of water and gently cook until they are softening but not mush, about 8 mins over a medium heat. Give them a stir after 5 minutes to move around.

Pour into an over proof dish and toss over the blackberries, orange zest and juice.

Tip the flour, butter, oats, sugar and mixed spice into a food processor and blend until it resembles rough breadcrumbs then pour over the fruit mix and bake at 180C for approximately 25 minutes until golden brown and bubbling. Serve hot or cold with a dollop of your favourite yogurt.
