Vegetable Rice
This is an amazingly easy and delicious one pot dinner, have it as is for meat free days or you can add some extra protein like my turkey balls recipe from our book. I absolutely love this dish and for me I dont even need to any meat, I love it as it is.
Serves 4
1/2 tbsp of oil
1 medium white onion chopped
1tsp of garlic powder or 2 cloves of garlic peeled mashed and chopped
1tsp each of salt and turmeric
3 small or 2 medium cooked red peppers from a jar, chopped
2 hand fulls of french beans washed trimmed and sliced
1 mug long grain rice
500ml stock of choice
Method
Heat the oil and add the onion and garlic (powder or fresh) and cook for 5 mins over a medium heat until softened. Tip in the red pepper, green beans, turmeric and salt. Stir everything and add a splash of stock if it is dry and cook for about 5 mins, toss in the rice, stir well to coat the rice, top with the stock, put lid on, bring to the boil and then turn down very low for about 15 mins. Check it is done and serve.
As you can see this is amazingly easy, you can serve with any meat of choice or just as it is.
