Apple and Blackberry Oat tray bake
This is delicious, slightly crunchy at the edges, not too sweet and a perfect lunchbox snack, making the warm oats adds a lovely texture as well as being lovely and filling.
100g porridge oats soaked in 300ml warm water and 1tsp mixed spice
100g butter
1tsp Vanilla extract
75g coconut palm sugar or ordinary brown sugar
1 egg
100g plain flour of choice
1tsp baking powder
4 eating apples peeled cored and chopped
100g blackberries
Oven at 170c
Grease and line a deep tray bake pan about 30 by 20 cm
Beat the butter and sugar together until creamy
Add in vanilla and egg and beat well, don’t worry if it looks slightly curdled – it comes together
Beat in the flour then fold in the oats mixture until well mixed
Pour into a prepared baking pan and cover with the apples and blackberries and gently press them down into the mixture
Bake for 50 minutes until a skewer comes out clean
Score with cutting marks then let cool completely and fully cut, best eaten within a few days.
Store in an airtight tin.
