Carrot Cake Bake
This recipe is a cinch and you can use gluten free flour also if you wish.
10oz plain flour
3 tsp mixed spice
8oz sugar – use light brown if you can
75g pecans chopped fine (use mixed nuts if you want)
2tsp baking powder
10oz carrots - grated
Juice and zest of 2 oranges
100g butter melted – let it cool a bit
4 eggs beaten with 75ml milk
Add all the dry ingredients to a bowl, mix them well and make a well in the centre.
Add the egg milk mixture to the dry ingredients along with the melted butter.
Mix everything well, add zest & juice of the oranges and the grated carrot, Mix to ensure it is well distributed.
Tip it into a lined tin about 25 by 25 and bake for 40 mins until a skewer comes out clean.
When cool cut into slices.
