Chocolate Sandwich Cookies

Chocolate Sandwich Cookies

Oven at 170c

Line 2 flat trays with parchment paper

120g plain flour

25g good quality cocoa powder

1/2 tsp salt

140g brown sugar

2 eggs

120g butter

180g good quality chocolate

To fill

60g each of chunky peanut butter and chocolate nut butter

Method

Mix the dry ingredients together

Beat the eggs

Melt the butter and chocolate and let cool a little

Pour the eggs and melted chocolate mixture into the dry ingredients and beat well until they form a thick batter

Drop spoons* of the mixture onto the baking trays -(they spread just a little) and bake for 10 minutes.

Set aside to cool then melt the peanut and chocolate butter together and use it to sandwich the cookies together.

*If you want when they are cooked you can use a round cookie cutter to cut the cookies into identical sizes, let them cool on the tray before lifting them, this makes neat sandwiches. TOTALLY OPTIONAL
