Egg Muffins - A variety of combinations

Eggs are a dessert island food here and they are nutritionally a great option (protein, vitamins, minerals, fats and at a low calorie bang if you are on a weight loss mission) They are fab for all meals especially for breakfast- such a good start to the day. The beauty of these muffins is you can make and bake them and they reheat amazingly well in the microwave.

You can please everyone by getting a selection of chopped veg, herbs, condiments like pesto or chutney and some spices like smoky paprika and everyone can make their favourite just add the eggs to the muffin tin and bake.

Oven at 180C

Makes 8-10

6 eggs beaten well plus about 30ml of water or milk

Fillings

Chopped tomato, basil pesto, diced red onion plus some chives

Chopped red pepper (cooked ones), paprika, diced red onion, cutney, plus some grated manchego or parmesan

Chopped feta,capers, chilli flakes

Grease a muffin tin

Whisk the eggs with a splash of milk of choice

Season well with salt and pepper

Add your muffin filing to the tin, pour over the egg mixture and bake for 15-20 mins until golden and puffed up. Serve warm - delicious!
