Mojo Potatoes
Crunchy & Spicy -exactly how a potato wedge should be.
Oven at 200C
100g flour
2tsp herb de provence
½ tsp black pepper
½ tsp chilli powder
½ tsp garlic salt
1½ tsp smoky paprika or what ever you have
½ tsp cayenne
100ml milk
1 egg, beaten
6 big white potatoes or 2 large sweet potatoes, cut in wedges
2tbsp rapeseed oil
Mix flour with all the herbs and seasonings and lay out on a large plate. Tip the milk and egg into a wide bowl and mix to combine. Add the potatoes to the milk, then onto the plate of seasonings, turning until well coated. Lay the potato wedges on parchment on a baking tray (or straight on the tray with a light
spray of oil). Bake for ten minutes, then flip over and bake for ten more.
