Simple Coconut Macaroons
These contain just 2 ingredients, 3 if you cover them in chocolate. They are an easy vegan recipe if you are looking for something to bake - they are on the low end of sweet so if you have a really sweet tooth then perhaps add 25g dark brown sugar but try them without first. Easy and delicious!
Makes 12
2 ripe bananas
200g dessicated coconut
pinch salt
50g good quality dark chocolate
Add the coconut. salt and banana to a blender and blend until they form a light sticky mix.
Press tablespoons onto a lined baking tray and bake for 20 minutes at 180c
Remove from the oven when golden brown.
Let cool, melt the chocolate and drizzle over then let to set.
