Coconut Macaroons

These are a delicious sweet treat and great for making in batches as presents. They are pretty low in sugar but really high in coconut which means that they are loaded in calories so make sure you give most of them away! They turn out at approx 140kcals a piece including 13g fats in each and that is using plain flour so remember if you use a nut flour they will be higher again.

Makes about 20

Oven at 180C

100g sugar

1tbsp plain flour or gluten free flour of choice

½ tsp salt

250g unsweetened desiccated coconut

1tsp vanilla extract

4tbsp coconut oil or butter melted

2 egg whites and 1 egg

100g chocolate 70% solids melted, to decorate

Mix all the dry ingredients together,

When the melted oil or butter has cooled slightly, whisk into the eggs beating well to combine,

Add the vanilla extract,

Add the wet into the dry ingredients and mix well,

Using a tbsp measure (a baking measuring spoon will have a nice dome shape), spoon onto parchment lined tray ,

Bake for 15 minutes until golden, rotate the tray halfway through,

When cooled, dip the flat bottoms into the melted chocolate and leave to set
