Shop Bought Gnocchi Made Extra Delicious
Gnocchi is one of those perfect things to buy in the current situration. It keeps well in the fridge and is easy to prepare but this recipe I’m going to let you in on a little secret to really make it really delicious and add some extra nutrition to make it a complete meal.
Serves 4
1 400g pack of ready made gnocchi
2tbsp oil
4 eggs
4tbsp pesto (shop bought is fine )
Serve with side of broccoli
Cook the gnocchi according to packet instructions and drain on a parchment lined piece of paper.
Keep the pot of hot water for cooking the eggs in later.
Heat a pan with the oil and fry the gnocchi for a few minutes each side until golden brown. Keep warm in a low oven while you get the eggs ready.
Poach the eggs (2 at a time probably best) in the gnocchi water . They will keep warm in the oven while you do the other 2.
Serve a portion of gnocchi with a spoon of pesto swirled through, place a poached egg on top and serve with some broccoli.
