Carrot and Feta Rosti with Hummus
Carrot and Feta Rosti
Makes approximately 4
1 potato or small sweet potato coarsely grated
1 large carrot coarsely grated
1tsp crushed garlic
1tsp chillis in oil or finely chopped red chili
2tbps fresh herbs - what ever you have that you like
1 tsp salt
100g feta chopped finely
1 egg beaten
1tbsp oil
Add everything to a bowl except for the oil, mix well. Heat the oil over a medium heat and cook them in batches by adding 2 heaped tbsp to the pan, flatten and season well. Flip over after about 2 minutes and keep warm. Serve with some hummus and mixed salad.
Hummus
1 can of chickpeas - reserve the liquid
1/3 to half liquid from can of chickpeas
3 tablespoons lemon juice
2 tablespoons Tahini
2 cloves garlic, crushed
1/2 teaspoon salt
1tsp sesame oil
Optional - 1 large red pepper from jar of roasted peppers (Optional)
Combine everything in a blender except the liquid
Add 1/3 of the liquid and blend well - add further liquid if needed depending on how you like it.
Season well according to taste. If you wish, add some more lemon juice depending on your preference.
