Blackbean Fahitas
Delicious Friday night party style food with all the flavours of Tex Mex -the trifecta of Cumin Chili and Paprika are the perfect combo to get your taste buds zinging.
You can use any beans you like but the black beans were in the supermarket the day I shopped - sub in any bean or tinned lentils even.
1 carrot peeled and diced very small
1 onion diced very small
1 ear of celery diced very small
1tbsp oil
2 tins of black beans net weight 240g
Heat the oil, add celery onion and carrot and cook over a medium high heat until it starts to soften and brown. You would like a bit of carmelisation, Tip in the drained beans, stir well and add the tex mex sauce below. Cook lid off at a medium heat for about 10 minutes until the sauce starts to thicken. Taste and adjust the seasoning as needed.
Serve with rice if you dont have the fahita trimmings, otherwise serve with tomato salsa, sour cream topping, chopped jalapenos, and some potato wedges.
Tex Mex Sauce
Blend 1 red onion, 1 jar of passata (600-700ml ish) 1 clove of garlic, 1tsp mixed herbs, 1tsp cumin, paprika, chilis in oil, 4tbsp honey 2tbsp cider vinegar until smooth.
