Cauliflower and Blackbean Bake
Blackbean Casserole with a Spice Cauliflower Crust
This is a great plant based meal or delicious side if you all still eat some meat.
For the topping
200g Cauliflower in florets
80g Almonds
4 anchovies or 1 tbsp Nutritional Yeast to make it vegan
40g grated Parmesan – omit or use vegan cheese
1heaped tsp chili
1tsp onion salt
1tbsp chutney (I used red onion)
1 cooked red pepper
Add everything to the blender and blitz and set aside until needed.
For the casserole
2 tins of blackbeans - rinsed
1 celery diced
1 white onion sliced
1 carrot diced
1tbso oil
300ml Tomato passata
1tsp salt
1tsp each smoked and sweet paprika
Add oil to medium pot and add the carrot onion and celery and sweat until soft.
Tip in everything else, stir well tocombined and cook for 10 minutes
Tip into an oven proof casserole and top with the cauliflower top and bake in the oven for 20 mins,
Serve as is or with rice if very hungry.
