Delicious Quick and Easy Midweek Dinner

This is comfort in a bowl, perfect for when everyone is very hungry and there isn’t much time to get the dinner on. You can omit the gnocchi frying stage if you wish to make it even quicker!

Serves 4

Ingredients

1 pack of gnocchi for 4

1 container of tomato soup

2 tbsp of pesto

4 slices of prosciutto

Method

Bring a pan of salted water to the boil and add the gnocchi and as they come to top of the water, scoop put into a hot frying pan with 2 tbsp of oil. Pan fry until golden on both sides, set aside and keep warm.

Meanwhile heat the soup until it is piping hot, When the gnocchi are all cooked, crisp the ham on the same pan.

Ladle the soup across 4 serving bowls, add the fried gnocchi, top with 1/2 tbsp of pesto and a slice of the crispy ham.
