Nasi Goreng

 

This is a great way to use up leftover couscous, quinoa or even cauiflower rice. It tastes delicious with very little effort involved, If you dont eat eggs simply leave it out and you can still enjoy the delicious flavours

Serves 1

200g leftover couscous, quinoa or cauliflower rice

1/2 red onion sliced

2 spring onions sliced

1 cooked red pepper sliced

1tsp chopped chili, garlic, ginger and smoked black garlic

1tbsp oil of choice

Heat the oil, add in the onion and spinng onion and cook until softening, Dump in the chili garlic ginger and smoked black garlic and stir around to mix well.

Dump in the cooked leftover couscous or what ever you are using and stir well to combine and heat, Season well and be sure to keep the heat at a low medium so it doesn’t stick,

Pour everything out into a serving bowl, add a little more oil to the pan if needed and cook your egg to liking. Sprinkle a little more chilli and smoked garlic over the egg and add to the bowl.
