Nutty Bean Burgers

These are yum and very easy to make. Beans burgers need lots of seasoning to really make them sing so dont hold back on the spice and heat if you like it. There are nuts and beans in these so you are well on your way to getting all your essential amino acids for a complete protein.

Nutty Bean Burgers
Makes 5 burgers

2 tbsp rape seed oil divided

1 medium red onion peeled and chopped finely
1 garlic clove peeled chopped and crushed
1 tin (approx 400g) of red kidney beans rinsed and drained
1 tin (approx 400g) of butter beans rinsed and drained
50g mixed nuts of choice chopped finely – cashews brazils walnuts cashews etc
1 heaped Spice Mix of choice - I use my own from our book or you can just buy a ready made one.

1 tbsp mayonnaise, vegan option of preferred.

1 tbsp lemon juice
salt and pepper

 Method

Heat 1/2 oil and fry the onion and garlic until softened, then tip in the spice mix and fry for other minute or 2. Add the beans and nuts and fry gently for about 5 minutes.
Transfer to a food processor and pulse gently to form a rough paste - don’t turn into a complete mush.
Transfer to a bowl and stir in mayonnaise, lemon juice, and season generously.
Divide the mixture into 5 equal portions and shape into patties and then chill until you are ready to fry. (Essential so they dont fall apart).
Heat the rest of the oil in a frying pan and fry the burgers for a minute on each side until golden brown. Dont play with them, just turn over once. You can reheat these in an oven for 10 minutes if you want to make them ahead. Serve these with all the burger trimmings you love or with some lentils for a delicious warm hit of spice.
