Cheats Lasagne with Roasted Veg

Quick and Easy Ravioli Lasagne with Roasted Veg

 Serves 3

250g good quality Ravioli of choice

1 Medium Sweet Potato peeled and chopped

2 tbsp oil

1 tsp salt and sweet paprika

350ml Tomato Passata

3 handfuls of grated Parmesan

3 Handfuls of Rocket

  Oven at 180C

Toss the chopped sweet potato in the oil, salt and paprika and roast at 180C for 15 minutes until tender.

Heat the tomato passata, season with some salt and sugar to taste and keep warm.

Meanwhile cook the ravioli according to packet instructions.

Drain and add to an oven proof casserole dish.

Top with the tomato passata and sprinkle over the parmesan cheese

Cook in the oven for 12 minutes until bubbling

Serve with the sweet potato and some rocket, plus a light sprinkle of olive oil.
