Savoury Veggie Bread

Ingredients

175g Grated Carrot or sweet potato

100g chopped red pepper (from jar of cooked peppers)

2 eggs beaten

4tbsp oil

175ml milk or protein milk if you like

75g grated cheese of choice like feta/ cheddar

3tbsp chopped fresh herbs of choice (Chives, Basil etc)

1 scoop protein powder (I used a pea protein powder)

250g Self raising flour

1tsp salt

Oven at 180C

Whisk egg oil and milk together.

Add grated carrot, red pepper and cheese into a bowl, sprinkle over the flour and protein powder and mix well then add the wet ingredients into that and mix util it all comes together like a wet dough.

You can cook this in individual muffin cases or in small mini loaf tins – make sure to oil the loaf tins well. Bake for approximately 15 minutes until golden brown and a skewer comes out clean. This made 6 mini loaves which can be cut into slices length wise.
