Spiced Nuts and Seeds

So, here’s the thing about nuts and seeds, nuts especially, they are delicious, really easy to eat, full of good fats and all, but are calorie bombs especially roasted like this. BUT if you are having people over for the evening then I can really recommend serving there. Just watch how many you have!

250gr assorted unsalted seeds and nuts including cashews, pistachios, walnuts, pecans and whole almonds plus pumpkin and sunflower seeds
1/2 tsp chili powder (I used a smokey one)
1 teaspoons sea salt
1 tablespoon butter melted
1 tsp honey
2 heaped tablespoons coarsely chopped fresh rosemary and thyme

Preheat oven to 150C
Toss the nuts and spread out on a baking sheet

Put the seeds into a little foil basket (to keep them separate) as they will cook much quicker
Toast for seeds for 10 minutes and the nuts about 20 minutes until they become light golden brown
In a large bowl combine the rosemary, chili powder, honey, salt and melted butter
Thoroughly toss the nuts and seeds into the spiced butter. Serve warm.
