Savory Vegetable Galette
Savory Roasted Veg Galette
For the pastry
8oz flour of choice
2oz butter
1tsp onion salt or table salt if not available
1tbsp poppy seeds
Enough water to bind
Add all the ingredients to a food processor and process until like bread crumbs.
Add in water 50ml at a time until it starts to come together
Tip out and gently bring together into a ball, flatten and wrap in cling film and place in the fridge
For the filling
1 large sweet potato peeled and cut in large cubes
1 courgette cut into chunks
2 red peppers cut into large slices
1tbsp oil
2tbsp pesto
Toss all the veg in the oil and roast until cooked in a hot oven.
Set aside to cool
Method
Roll out the pastry until 3mm thick into a rough circle
Spread with the pesto leaving a 3cm border
Place the roasted veg on top of the pesto, season well.
Dampen the pastry border with water and bring over the veg, frilling the pastry as needed to keep the shape.
Brush the border with milk or beaten egg and sprinkle over some more poppy seeds and bake at 180C for 20 minutes until golden brown.
Serve with a green salad drizzled with some good olive oil.
