Mixed Bean and Patatas Bravas Casserole
A delicious plant based dinner if you omit the small amount of chorizo I put in it. I call in potato bravas style as it has lots of lovely paprika and garlic. I use sweet potato and regular, you can use just the one type if that’s all you have.
Serves 4
1tbsp oil
1 medium onion
1tbsp chopped garlic
5 slices of chorizo (the very skinny slices)
1tsp celery salt
1 tsp each of sweet and smoky paprika
1 medium sweet potato peeled and but in chunks
1 large rooster or similar peeled and cut in chunks
1 tin mixed beans
1tsbp tomato puree
1 stock cube in 400ml water
2 cooked red peppers (from a jar) sliced
Heat the oil and add the chorizo and cook gently until it starts to release its oil then add the onion and garlic and cook over medium heat until both are softening.
Add the spices and stir to mix well. Toss in the potato chunks and mix well and give it a minute or two to coat in the spice and oil. Stir in the tomato puree and the stock mix followed by the beans and cook for about 12 minutes until the potato is almost tender. Check it from time to time to stir and mix around. (You dont want the same piece of potato sticking out of the water not cooked).
Add the cooked red peppers and cook for a further 5 minutes or what ever it takes to finish cooking the potatoes. Serve with rice and some chopped fresh parsley. This is a hug in a bowl -yum!.
