Savory Pancakes with a spicy dipping sauce
These are so easy, throw a fried egg on top or roll up with some veggie fried rice for a complete dinner and something different than your usual.
Dipping Sauce
2tbsp soy
2tbsp rice or other vinegar
2tsp sesame oil
2tbsp chopped fresh coriander
1 green onion sliced
2tbsp warm water
Mix everything together, taste and adjust if needed. Set aside while you cook the pancakes.
Pancakes
3 green onions trimmed and sliced
1 thumb of ginger peeled and grated
1/2 small red chilli julienned
3tbsp chopped fresh coriander
2heaped tsp chopped garlic
1tsp salt
120g plain white flour
150ml water (plus perhaps a little more)
Add all the ingredients except the water to a bowl and make a well in the centre. Add the water and mix well until no flour remains. The batter needs to flow when you tip the bowl so if needed add another 10-20 ml of water.
Heat a little oil in a non stick pan and add enough batter than you can spread it out thinly with an offset palette knife or spoon. Let it cook well before flipping it over. Makes 4 bigger or 8 smaller pancakes.
Serve with the dipping sauce.
