Warm Potato Salad with Crispy Parma
500g new or baby potatoes
4 slices parma ham
2tbsp chopped fresh flat leaf parsley and chives
Dressing
8tbsp olive oil
3tbsp red wine vinegar
1tspdijon
1tbsp honey
1/2 tsp each of salt and pepper
1 small shallot sliced finely
1tsp mashed garlic
Method
Bring potatoes to the boil and cook until tender, drain and cut into bite size pieces
Make dressing by whisking everything together
Heat a pan and crisp up the Parma ham, let it cool and break up into pieces
Add the potatoes to a bowl, drizzle over the dressing, add the Parma and herbs, gently mix everything taste for seasoning and add more salt if needed.
It is delicious served with any meat or fish on the BBQ or with any big salad if you are vegetarian simply omit the parma.
