Pan Fried Halibut with Lentils
Pan Roasted Fish with Lentils
Serves 4
Spice mix made from 1 tsp each of ground cumin, coriander, garlic salt, smoked and sweet paprika
2 tbsp oil divided
1 medium onion diced
1 tbsp tomato puree
250gr lentils of choice
1 vegetable sock cube made up in 200ml hot water
½ tin chopped tomatoes
4 portions of fish of choice, skin on, pin-boned
2 tbsp fresh chopped coriander
Method
Heat the oil in a pot and add the onion and cook over a medium heat until soft.
Tip in the spice mix and stir well and cook for a minute.
Add the tomato puree stir well to combine followed by the tinned tomatoes, stock and lentils.
Cook for about 20 minutes until the lentils are ready then stir in 2 tbsp chopped coriander,
Meanwhile heat the oil and on a hot pan, season the fish and cook the fish skin side down until almost done, add a spoon of butter to the pan, turn over the fish and baste with the butter as the fish finishes cooking. Serve the lentils topped with a piece of fish. Delicious and easy - even quicker if you use tinned lentils to save time.
