Pan Fried Salmon with a Caper & Toasted Almond Salsa

Who doesn’t love salmon?, its a dream of a fish, lovely to eat, full of good fats and protein and this salsa works so well with it , adds some lovely zing and cuts through the oils from the fish. A simple green salad works perfectly with this and add some potatoes to make it a substantial evening meal.

I use ghee or clarified butter when frying the fish as it wont burn while you are getting a nice crispy skin on the fish.

Serves 4

4 salmon fillets, skin on

1tbsp clarified butter or ghee

Caper and Toasted Almond Salsa

2 tbsp of slivered almonds - toast and set aside to cool

50ml olive oil

20ml of white wine vinegar

juice of 1/2 lime

1tbsp honey

salt and pepper

1 spring onion sliced

2tbsp capers, drained and chopped

For the salsa, whisk everything except for the almonds together season and taste. Set aside until serving and add the almonds at the last moment,

For the salmon

Pat dry with a piece of kitchen roll, season well with salt.

heat the ghee in an oven proof pan and put the salmon in skin side down. Dont touch and leave to cook over a high heat for about 3 minutes. Flip over, baste the salmon with the butter / ghee and put into the oven until done - about 8 minutes but could be more if your fillets are very large.

Transfer salmon to your serving plate and spoon over the salsa. Serve with green salad and veg.
