Summer Pea Salad
Summer Pea Salad with a Lime Miso Dressing
Vibrant and Fresh - loaded with flavour and plant powered vitamins, minerals and protein.
Ingredients
250g peas, use frozen if you like
handful of small mint leaves picked
100g feta in small cubes
Dressing
Juice of 1/2 lime
2tbsp rice vinegar
60ml rapeseed oil
1tsp each miso paste and sesame oil
2tsp honey
Salt and pepper to taste
For the salad
Add peas to a pot, cover in boiling water and cook fro a few minutes until just tender. Drain.
Mix all the ingredients together for the dressing, taste and adjust if you need a little more sugar or lime juice.
Pour 1/2 over the peas and reserve the rest.
Add peas to a serving plate, add the feta, garnish with the mint leaves and serve.
