Thai Style Sweet Potato Soup
A taste of Thailand with delicious coconut and sweet potato. This is a perfect lunch dish or make more substantial with the addition of some poached chicken for the perfect evening meal.
Serves 4-5
1tbsp oil
3 small sweet potatoes peeled and cubed
1 red onion diced
1 medium carrot peeled and diced
1tsp each of minced garlic ginger and chilis in oil
1tbsp tomato puree
`1 cooked red pepper, sliced
1 400ml can coconut milk
1-1/2 litres of veg or chicken stock
2 spring onions sliced on diagonal
2tbsp fresh coriander
1tbsp each of fish sauce, soy sauce and lime juice plus more according to your taste
1/2 tsp coconut palm, palm or regular sugar
Heat the oil, sweat the carrot onion ginger garlic and chili for about 10 minutes, add a splash of water if needed.
Add the tomato puree, the red pepper and stir well and cook out for a minute or two,
Add the stock and coconut milk, mix well and toss in the sweet potato and simmer gently for about 12 minutes until the sweet potato is done.
At this point you season with the fish sauce, lime juice, soy sauce and sugar to taste.
Just before serving, stir in the coriander and spring onion.
