Miso Broth with Poached Fish and Veg

Quick easy delicious and versatile. This is a perfect winter dish which can be whipped up in no time. You could substitute with chicken, just cook for longer and instead of the noodles, could add leftover cooked rice into the bowl before ladling out the broth. Nutritious, Delicious, Easily made, Healthy food which all the family can eat.

Serves 4

4 pieces of fish of choice, bones and skin removed

250g Sweet Potato peeled and cut into sticks

100g Broccoli cleaned and cut into small florets

2 tbsp miso paste

500 ml hot water

1 veg stock cube

1 tbsp tomato puree

1 tbsp honey

1 tbsp white wine  vinegar

4 portions of soba noodles or noodles of choice

2 tbsp chopped fresh herbs to finish

Pour the water into a wide cooking pot, Add the miso paste, honey, vinegar, puree, stock cube and stir over a medium heat until everything is combined. Add the veg, noodles and fish (last so it stays on the top) and cook over a medium heat for about 7 minutes until everything is cooked. Spoon the broth over the fish from time to time to ensure the top cooks.

Divide the fish and broth into 4 bowls, sprinkle generously with chopped herbs and serve.
